“Eating” your Christmas tree

Here’s a way to recycle your Christmas tree you probably never thought of before: Serve it for dinner!

UK cook Julia Georgallis has a new cookbook called How to Eat Your Christmas Treethat’s featured in Smithsonian Magazine with dozens of recipes you can make using your tree…like “Christmas-Cured Fish” that uses a pound of needles for decoration and flavoring…or “Christmas Tree Pickles” brined with pine needles.

There’s even ice cream flavored with blue spruce needles and ginger!

Julia created the book so people would get better use out of their trees rather than just throwing them away…she also wonders why we don’t already do it because we forage so many other plants.
